INGREDIENTS:-
- Maize flour 1 cup
- Idly batter 3 cups
- Baking soda 1/2 tsp
- Salt 2 tsp
- Water 2 cups
METHOD:-
- Mix all the ingredients to a smooth batter and keep it aside for 2 hours.
- Heat paddu pan and add oil to each hallow and pour ladleful of batter in each.
- Fry on oneside and turn on the other side.
- Fry on low heat, it takes time to bake.
- Serve with chutney and sambar.
INGREDIENTS:-

- Ragi flour 2 cups
- Curd 1 cup
- Water 3 cups
- Salt 1 1/2 tsp
- Baking powder 1 tsp
- Oil for frying
METHOD:-
- Mix ragi flour, water, salt, and curd to a smooth paste, without lumps.
- Its better to whip 2 or 3 times in mixy.
- Keep it aside for 1 hour. Add baking powder 10 minutes before frying, mix well.
- Heat paddu tawa brush oil, mixthe batter once and pour in each hallow.
- Fry on one side and turn over. Add more oil if necessary.
- Serve hot with roasted gram chutney.
INGREDIENTS:-
- Idly rice 1 cup
- Urad dhal 1/4 cup
- Tur dhal 1 1/2 tbsp
- Wheat flour 1/4 cup
- Maida 1/4 cup
- Rawa 1/4 cup
- Ginger 1/4"
- Garlic 3 flakes
- Salt 2 tsp
- Curry masala 1 tsp
- Chilly powder 2 tsp
METHOD:-
- Wash and soak rice, urad dhal, tur dhal, for 5 hours.
- Grind to smooth paste, with ginger, garlic, curry masala, chilly powder, and salt.
- Mix wheat flour, maida, rawa in 2 cups of water and add to the batter.
- Add water if the batter is thick. Keep it aside for 1 hour.
- Heat paddu tawa add 1 tsp of oil to each hollow.
- Pour batter in each and roast on one side and turn and on the other and fry.
- Fry on medium heat till crisp. Serve with chicken gravy or any other gravy.
INGREDIENTS:-
- Idly rice 2 cups
- Urad dhal 1/4 cup

- Soak rice, urad dhal together for 8 hours.
- Grind to a smooth batter, add salt and mix.
- Add water if necessary, the batter should be in thin consistency.
- Heat paddu tawa, brush oil, pour 1 tbsp of batter in each hollow.
- Fry on both sides, serve with coconut milk, or pudina chutney.

- Rawa 1 cup
- Rice flour 1 cup
- Maida 1 cup
- Baking Soda 1 tsp
- Salt 2 tsp
- Water 6 cups or more
FOR SEASONING
- Oil 2 tbsp
- Onion 2 chopped
- Green chilies 4 chopped
- Curry leaves few chopped
- Coriander leaves handful
- Cumin seeds 1 tsp
- Mustard seeds 1 tsp
- Urad dhal 1 tsp
- Bengal gram 2 tsp
METHOD
- Mix rawa, rice flour, maida, salt, baking soda, and water.
- There should be no lumps, soak for 1 hour.
- The batter should be thin by pouring consistency.
- Heat oil in a Kadai, splutter mustard seeds, and cumin seeds.
- Fry urad dhal, and Bengal gram dhal.
- Saute onion, curry leaves, chilies, and pour in the batter.
- Heat the paddu or gulittu stone or pan, spray oil and pour ladleful of batter in each hollow space.
- Fry on one side and turn on the other and roast.
- Fry on low heat and roast till crisp.
- Serve with thick chutney.
Ingredients

- Eggs 2 nos
- Onion 1 chopped
- Green chilies 2 chopped
- Coriander leaves little chopped
- Curry leaves few cut
- Salt 1 tsp
- Water 1/4 cup
For seasoning
- Mustard seeds 1 tsp
- Cumin 1/2 tsp
- Urad dal 1/2 tsp
- Bengal gram 1 tsp
- Asafoetida 1/4 tsp
- Oil 1 tbsp
Method
- Beat eggs and add to the batter and stir well.
- Heat oil in a Kadai splutter mustard seeds, add urad, cumin, and bengal gram.
- Fry adding onion, curry leaves for 2 or 3 minutes.
- Cooldown and add it to the batter.
- Heat gullittu maker rub oil and pour half ladleful batter to each.
- Turn over when it is half cooked so it stays in round shape.
- Roast both sides until crisp.
- Serve with coriander chutney.
