Ingredients
- Brinjal 6 purple cut into pieces
- Small onion 10 peeled
- Ginger garlic paste 1 tsp
- Turmeric 1 tsp
- Chilly powder 1 tsp
- Dhania powder 1 tsp
- Garam masala 1 tsp
Masala Powder
- Roasted gram 2 tbsps
- Fennel seeds 1 tsp
- Patta 1"
- Cloves 5
For seasoning
- Mustard seeds 1/2 tsp
- Urad dhal 1/2
- Bengal gram dhal 1 tsp
- Curry leaves 5 or 6
- Coriander leaves little and for garnishing
- Oil 3 tbsp
Method
- Heat oil in a Kadai add seasonings splutter mustard.
- Add onion, curry, and little coriander fry until light brown.
- Now add ginger garlic paste fry till raw smell goes.
- Sprinkle dhania, turmeric, chilly, garam masala powders.
- Add brinjal, salt.fry for 2 minutes.
- Pour water and boil for 2 minutes.
- Close the lid and cook for 10 minutes on slow flame.
- Open the lid and add the powdered roasted gram masala.
- Mix and cook until the oil floats on top of the gravy.
- Garnish with coriander leaves.
- Serve with Dhal rice or any rice and chapati.
