Brinjal Gravy

Ingredients

  1. Brinjal                             6 purple cut into pieces
  2. Small onion                    10 peeled
  3. Ginger garlic paste         1 tsp
  4. Turmeric                         1 tsp
  5. Chilly powder                 1 tsp
  6. Dhania powder               1 tsp
  7. Garam masala                 1 tsp
Masala Powder
  1. Roasted gram                2 tbsps
  2. Fennel seeds                  1 tsp
  3. Patta                               1"
  4. Cloves                            5
For seasoning
  1. Mustard seeds              1/2 tsp
  2. Urad dhal                     1/2
  3. Bengal gram dhal         1 tsp
  4. Curry leaves                 5 or 6
  5. Coriander leaves          little and for garnishing
  6. Oil                                3 tbsp
Method
  • Heat oil in a Kadai add seasonings splutter mustard.
  • Add onion, curry, and little coriander fry until light brown.
  • Now add ginger garlic paste fry till raw smell goes.
  • Sprinkle dhania, turmeric, chilly, garam masala powders.
  • Add brinjal, salt.fry for 2 minutes.
  • Pour water and boil for 2 minutes.
  • Close the lid and cook for 10 minutes on slow flame.
  • Open the lid and add the powdered roasted gram masala.
  • Mix and cook until the oil floats on top of the gravy.
  • Garnish with coriander leaves.
  • Serve with Dhal rice or any rice and chapati.
