Brinjal gojju

Ingredients
  1. Brinjal                               1/2 kg
  2. Small onion                       10
  3. Ginger-Garlic paste           1 tsp
  4. Turmeric                            1/2tsp
  5. Chilly powder                    1 tsp
  6. Salt                                    1/2 tsp
  7. Garam masala                    1 tsp
  8. Dhania powder                  1 tsp
For Seasoning
  1. Oil                                   2 tbsp
  2. Curry leaves                    little
  3. Mustard seeds                 1/2 tsp
  4. Urad dhal                        1/2tsp
  5. Bengal gram dhal           1 tsp
  6. Coriander leaves             for garnishing
Method
  • Heat oil in pressure cooker, add seasoning.
  • Add onion and fry for 2 minutes.
  • Fry adding ginger-garlic paste.
  • Cut brinjal and mix with salt, turmeric, dhania, chilly,garam masala powders and salt.
  • Add to the fried onion and cook for 2 whistle without adding water on low flame,
  • Garnish with coriander leaves.
  • Serve hot with dhal rice. This combination tastes good.
