RICE DUMPLINGS [ kadubu, kolukattai]

INGREDIENTS

  1. Rice Flour           1 cup
  2. Water                   1 1/2 cups
  3. Salt                      1 tsp
  4. Oil                       1 tsp
FOR SEASONING
  1. Oil                              2 tbsp
  2. Onion                         1 cut
  3. Green Chilies             5 cut
  4. Curry leaves               few
  5. Ginger-garlic paste    1 tsp
  6. Coriander leaves       handful
  7. Water                        5 cups
  8. Mustard seeds           1 tsp
  9. Urad dal                    1 tsp
  10. Bengal gram dal       2 tsp
METHOD
  • Boil 1 1/2 cups of water in a pan, add salt, and oil.
  • Add rice flour, and mix quickly by a ladle.
  • Off the stove, close the lid and keep it aside for 1/2 an hour.
  • Meanwhile, heat oil in a pan, splutter mustard seeds, fry urad dal, Bengal gram dal.
  • Fry onion, ginger garlic, green chilies, curry leaves, for a minute.
  • Add water, salt, and bring to boil. Knead the rice flour like chapati dough.
  • Make small tiny balls from the cooked rice flour.
  • Add them to the boiling water and cook on a low flame.
  • Cook for 5 minutes, garnish with coriander leaves.
  • Serve with green chilies chutney.
