INGREDIENTS- Cooked Quinoa 1 cup
 - Eggs 6 nos
 - Onion 2
 - Green chilies 5
 - Red chilies 5
 - Ginger-Garlic paste 1 tsp
 - Curry masala 1 tsp
 - Salt 1 tsp
 - Lemon juice 1 tsp
 - Coriander leaves for garnishing
 
FOR SEASONING
- Oil 2 tbsp
 - Mustard seeds 1 tsp
 - Urad dhal 1 tsp
 - Bengal gram dhal 1 tsp
 - Hing 1/2 tsp
 
METHOD
- Heat oil add seasoning, splutter mustard seeds, fry both dhal.
 - Add curry leaves, red and green chilies for a minute.
 - Add hing and onion, ginger-Garlic paste, curry masala, and fry for a minute.
 - Set onion to one side of the pan, on the other side crack eggs to scramble.
 - Mix all and add Quinoa, salt, lemon juice and fry on high heat for a minute or more.
 - Garnish with coriander leaves. Serve with chutney.
