Spongy Idly Batter

Ingredients

  1. Idly Rice                   5 cups
  2. Urad Dhal                 1 cup heaped
  3. Fenugreek seeds       1 tbsp
  4. Salt                           7 tsp
  5. Water                        5 cups of water
Method
  • Wash rice 2 times and soak separately
  • Wash urad dal 1 time and soak with fenugreek seeds.
  • Soak for at least 5 hours,
  • Grind urad dal first for 20 minutes to smooth and fluffy. Adding 1/2 cup of water
  • Grind rice for 45 minutes.Adding 1 1/2 cups of water.
  • Transfer the 2 batters to a large vessel.
  • Add 3 cups of water to the grinder and clean.
  • Take out the rice water and add to the batter.
  • Mix both batter adding salt to a fluffy consistency.
  • Close it and ferment for at least 12 hours.
  • The batter will be ready on the other day.
