Rice cakes -Sugar Elabalittu

Ingredients
  1. Rice                 1 cup
  2. Sugar               1 1/2 cups
  3. Cardamom       6 powder 
  4. Water               6 cups +1/2 cup
  5. Coconut           1/2 cup[cut into small pieces]
  6. Roasted gram   1/4 cup
  7. Sugar                1 cup
Method

  • Wash rice and soak for 5 hours.
  • Grind to a smooth paste. Add water.
  • The batter should be very thin consistency.
  • Take a heavy-bottomed vessel add sugar and 1/2 cup water.
  • Bring to boil and add the rice batter to it. Stir fastly. 
  • Cook on a low flame. Add coconut and roasted gram. 
  • Keep on stirring until the rice mixture gets thickened.
  • The dough looks shining if cooked. Off the stove.
  • Now add powdered cardamom. Mix thoroughly.
  • Spread wet cloth on a table or broad plate.
  • Take a ladleful rice cake and put it on the wet cloth.
  • Close another wet cloth on the top, so the cakes won't dry.
  • Cool it and have the tasty, yummy elabalittu.
