Pan Cakes

Ingredients

  1. Maida             2 cups
  2. Eggs               2 nos
  3. Eno                 1 tbsp[ or baking powder]
  4. Milk               2 cups
  5. Salt                 1 tsp
  6. Sugar              2 tbsp
  7. Melted butter  2 tbsp + for serving
  8. Oil                   2 tbsp
Method
  • Beat eggs, sieve maida, and Eno.
  • In a glass bowl take maida, sugar, salt, butter, oil.
  • Mix them and add the beaten eggs, milk.
  • Mix to a smooth batter and keep it aside for 2 hours.
  • Heat Tawa and pour a ladleful of batter to it.
  • Fry on both sides like dosa.
  • Just pour the batter don't spread it, close a lid on tawa.
  • After frying on one side open the lid and roast on another side.
  • Serve with sugar syrup and butter on them.

 For Syrup
  1. Jaggery                1 cup
  2. Sugar                   1 cup
  3. Vanilla essence    1 tsp
  4. Lemon                  1 tsp
  5. Water                    1 cup
Method
  • In a pan add both sugar, jaggery, and water and boil on low flame.
  • Boil for 5 minutes, strain the syrup into a serving bowl.
  • Add vanilla essence and lemon juice.
  • Stir well and serve with butter, and any fruits.
